Vanilla Chai Chia Pudding

Wholesome, creamy & delicious Vanilla Chai Chia Pudding that’s perfect for breakfast, a mid-day snack or a healthy dessert! add your favorite fruit toppings + drizzles to this simple base recipe~

ingredients

  • 1 cup full fat coconut milk

  • 1/4 cup chia seeds

  • 2 tsp citrus zest

  • 2 tsp soul chai powder

  • 1/2 tsp vanilla extract

  • 3 tbsp maple syrup

  • pinch of salt

optional toppings:

  • 1 cup Greek yogurt

  • slices/diced apricots

  • shredded coconut

  • maple syrup/agave

it’s easy!

  • Whisk all the ingredients together in a bowl until well combined. Let sit for 2-3 minutes then mix again

     

  • Cover and place in the fridge for 2+ hours before serving

  • for tasty layers, top these chia puddings with some yogurt or whipped cream, fresh fruit + a sprinkle of soul chai. enjoy!
