Soul-Spiced Banana Nut Muffins

Ingredients

  • 2 cups all-purpose flour

  • 1.5 teaspoons baking soda

  • .5 teaspoon salt

  • 4 overripe bananas

  • 1 cup brown sugar

  • 3 tbsp soul chai powder

  • 3/4 cup (1 1/2 sticks) butter, melted + cooled

  • 2 eggs

  • 1 teaspoon pure vanilla extract

  • 1/2 cup chopped pecans or walnuts

it’s easy!


- Preheat oven to 375F & lightly grease 2 muffin tins

- In a large bowl, combine the flour, baking soda, soul chai and salt; set aside

- Mash 2 of your bananas with a fork in a small bowl (keep em a little chunky). With an electric mixer, whip the remaining bananas and sugar on high for a few min.

- Add the melted butter, eggs, and vanilla and beat well, Mix in dry ingredients until incorporated (don’t overmix). Fold in the nuts + mashed bananas with a rubber spatula

- Spoon the batter into the muffin tins to fill them a little over halfway (tap to get any air bubbles out)

- Bake 18-20 min. or until a toothpick in the middle comes out clean. Let cool for a few minutes before popping those bbs out

  • serve fresh with a pippin’ hot cup of chai <3
